Chocolate? Coffee? No Guilt? Um, yes please! This scrummy recipe from Amy’s Healthy Baking will satisfy even the sweetest of tooths without a hint of regret, shame or loosening of belts. And to top it off, this is a super-easy recipe made with ingredients (mostly) that you’ll have already in your pantry. Just grab some of your favourite protein powder and get cooking!
Mocha Brownie Protein Bars Recipe
- 3 scoops (90g) plant-based vanilla protein powder
- ½ cup (40g) unsweetened cocoa powder
- ½ cup (50g) old-fashioned oats
- 2 tbsp (28g) Truvia or other sweetener, to taste
- 1 cup (240mL) cold Sacred Grounds espresso-made coffee (use a double shot to intensify the coffee flavouring and dilute with water)
Line a 23cm x 13cm loaf pan with baking paper.
In a big bowl mix protein powder, oats, cocoa powder and Truvia. Stir in the cold awesome coffee until combined.
Pour into pan and press down evenly with a spatula.
Pop into the fridge and chill for at least 2 hours or until firm. Then slice away into delicious, healthy protein bars. Eat… Then stop eating – if you can!
Yum! Coffee and chocolate make the perfect combination, don’t they? And you must, I repeat must, brew up an espresso to have with these beautiful bars of deliciousness. One top tip is to pop them into the freezer 10 mins before eating because they can be a bit flimsy.
