One of our newest additions to our Single Origin collection, Nicaragua has a beautifully balanced flavour palate that you’ll love to explore and discover. Located in the middle of the famous ‘coffee belt’, Nicaragua’s tropical climate is the perfect environment to grow high quality coffee naturally.

Sacred Grounds Producers

Cooperative Regionalde Cafetaleros de San Juan de Rio Coco (CORCASAN ) was formed way back in 1978 and has been Fairtrade certified since 2005. Today CORCASAN is made up of 250 members, 160 farmers and covers 221 square kilometres of beautifully humid tropical rainforest. Coffee plants thrive in the shade that this region offers. Not only is CORCASAN able to grow quality organic Fairtrade coffee but at an incredible rate with approximately 16,500 bags of coffee sold each year.

Each step of the process is monitored by the co op ensuring quality is maintained from crop to bag.

The Coffee

One of the things we love about Single Origins is that you can pinpoint the individual flavour notes in each variety. It takes a while to perfect your palate but once you do, then you’ll never go back. Our Nicaragua Single Origin offers a flavour combination like no other with a base of yummy chocolate, a delicate sweet aroma, citrus tones, honeyed, bright medium acidity – all in all a well rounded cup.

How to Drink It

Cold press it, plunge it but by far the best way to really appreciate our Nicaragua Single Origin is having a milk based espresso. YUM! But wait, there’s more! Don’t go for your traditional latte or cappuccino, instead try this incredible coffee in mini version to really savour the flavours with a piccolo latte. Double yum!

5 Common Coffee Mistakes

Making coffee is a process and each step of that process has to be just right in order to create the perfect coffee. One slip up and you’ll be left with a so-so kinda coffee which is better than none, right? But if you feel like you’re ticking all the boxes and your final product is still not up to scratch you may be making one of the following simple mistakes – easily rectified.

5 Common Coffee Mistakes

1. Inferior Beans

This first point is a passion for us because we’re all about quality, Fairtrade, organic coffee beans. It’s not just that they’re chemical-free – which is great for the environment and your own health – but they have to retain all their natural flavours. Inferior beans mean that you’re starting with a shaky foundation. If your foundation is dodgy, the final product will not be great. If you’re new to the coffee world, we recommend trying a blend – they’re generally smoother in taste – a bit of a crowd pleaser.

2. Unclean Machines

This one is a no-brainer really. If your home coffee machine is dirty, then the flavours of your beautiful coffee will be tainted. Coffee beans are full of essential oils that will leave a stale taste if left floating around your water container or sticking to your Portafilter or basket. A clean machine is not only important for health reasons but will maintain the integrity of the coffee and give you a clean, crisp taste to your coffee time after time. 3. Measuring Mishaps

This can be a bit confusing but in order to create the perfect coffee, your measurements should be fairly precise. This requires a set of scales! Measure out 20g or if you live scales-free then 2 heaped tablespoons of coffee beans then grind away. Using the right amount of coffee means that the extraction will not be too fast or too slow giving you that beautiful ‘mouse tail’-like appearance as it trickles from the basket into your warmed coffee cup = bliss!

4. Milky Mayhem

You may be one fantastic coffee grinder conoissieur or espresso extractor but if you get your milk texturing wrong, then the whole coffee may end up down the sink. Nooooo! This step can be tricky but we have some handy tips to help you get the perfect texture each time you steam.

  1. Purge -release steam
  2. Milk Jug – select the right jug for the job
  3. Quantity – fill 1/3 full
  4. Stretch!! – Click here for directions…
  5. Heating – Warm until hot to the touch
  6. Clean – Wipe and purge your steam wand
5. Frosty Beans

There is a strange common-held belief that storing coffee beans in the fridge, or dare I say, freezer will keep them fresh as a daisy! The truth is that these frosty places produce too much moisture which is a coffee killer. Yep, the absolute, hand-to-heart truth of the matter is that storing your beautiful Fairtrade organic Sacred Grounds beans in the fridge/freezer will destroy their flavours, freshness and fabulousness so please refrain. Instead, store beans in an air-tight container or our resealable foil-lined coffee bags and pop them in a dark, cool pantry. Too easy!

Coffee FAQs


How should I store coffee?

The best way to store coffee is in a cool, dark place in an airtight container; your pantry cupboard is ideal. Never store your coffee in the fridge or freezer, this will allow moisture into your coffee and will dull the taste.

How long does coffee last?

Ideally you want to be drinking all your coffee within a month from roasting. Though, if stored correctly, coffee shouldn’t go off, though the flavours will fade over time.

When is the optimum time to drink coffee after it’s been roasted?

Depending on the brew method you use and the coffee that you’re buying, the optimal age for coffee can vary. We generally recommend that coffee is ready to drink 4 – 5 days after roasting.

Which grind do I use for which brewing method?

This is really important because grind size is a vital component when it comes to making a great coffee. So if you’re using a filter system like V60, AeroPress or Chemex etc, or  whipping up a Cold Brew and or getting stuck into the old Plunger then coarsely ground coffee is the go! But for your Espresso machine and Stove Top coffee maker you’ll want to go for finely ground coffee. 

Which Coffee should I use for which brewing method?

Coffee is subjective is there is no definitive right and wrong answer, though we definitely have our recommendations:

  • Filters (V60, AeroPress, Chemex etc.): Single Origin – Light or Medium Roasted beans
  • Plunger:  If you enjoy black coffee then a Single Origin, Medium Roast is best. And if you prefer your coffee with milk then we recommend a Blend or Medium Roast.
  • Coffee Machine or Stove Top:  For black coffee choose a Single Origin, Medium to Dark Roast but if you prefer a white coffee, then go for a Blend, Medium to Dark Roast.
  • Cold Brew: Choose Single Origin or a delicious Blend; Light to Medium Light roasted beans.

What is the difference between a Blend and a Single Origin?

A Single Origin refers to the coffee grown in a single geographic area, region; this can be an entire country or smaller region within. A Blend is where coffee beans from different countries are blended together.

A Blend is created to produce a consistent, well rounded flavour whereas a Single Origin contains the flavours of the natural environment and processing techniques of that particular region.
